I've been busy at my son's school today. Love meeting people and sorting the students queries and sometimes calming their fears.

I won't be doing an Open House this weekend with it being Super Bowl Weekend. I believe in the saying....'When in Rome'

Yes I like watching the game AND the advertisments in-between the match AND watching a world famous group perform at half-time

I've been updating my Realtor page. Have a look and tell me what you think.

This week has been relatively stable. I have had the odd 'blip in the system' but for the most part I have stuck within my carb quota.

This week I have lost 3lb

Average daily carbs over the last 7 days comes to around  42

Big WOOOP WHOOP.

Could it have been better? Absolutely.

I didnt lose any weight last week. I have yet to lose 2 more pounds to get back to my pre-Christmas weight, but I am getting their. I honestly didnt expect to lose as much as I did this week and it has given me a positive outlook for next week.

Unfortunately, due to my darn root-canal 2 weeks ago, I havent been to the gym much because of the pain. I am on the mend although I still cant chew on it. Not sure that's a good thing but I am at the dentist tomorrow and he wants to take the packing out of the tooth and fill it. AINT HAPPENING!!
So, I am 3lb lighter and feeling good for it. Wish me luck at the dentist tomorrow

OMG...I completely forgot about the cheese thing for the New Year. Before I knew what was happening I was halfway through my soup. How sad is that?!

Wow was it good.

So, yes I have spoiled my New Year's Resolution but on only 1 occasion. I will battle on cheese-less for the rest of the year....if my wonderful ageless yet degenerating brain cells dont let me down

You'd be surprised what you find on E-bay....and it's cheap!!

Dinner: Roast leg of lamb with spinach, broccoli and peas
Snack: 1/2 sugar free jello with Greek yoghurt

Busy watching my son's trumpet performance with the Electric Jazz Orchestra. So nice to see him doing something he thoroughly enjoys

While all this was happening I realized at lunch that I hadn't planned ahead with any low-carb snacks but I reneged on the pizza  and just had the salad and the topping of 1 small square and threw the bread base away.

I think that's the first taste of cheese since Christmas

And I'm not mentioning my toothache

B'fast: Low-carb yoghurt mixed with Greek yoghurt
Lunch: Turkey breast slices on 1 low-carb wrap
Dinner: Pulled turkey and mixed salad on 2 low-carb wraps followed by Greek yoghurt and 2 cubes of high cocoa chocolate..

Carbs for today around  55

Carbs are a little higher than I'd have liked today.

Still eating small bitesize pieces of food or mushy meals so that I can eat it without having to chew much because I cant eat on one side of my mouth and if any small piece of food finds it's way to the other side....boy it's painful! Darn root canals

Only taking regular headache tablets but apparently, according to the doctors assistant, they are anti-inflammatory and that's what I need most. My headache gets so bad that I feel my skull has been hit with a hammer. Not that I would know how that feels but you get the gist.

I roasted 1/2  turkey breast on a very low oven, double wrapped in foil and it was so moist and fell apart.

It was delish

Dinner: Pork loin roast with peas and spinach followed by 1 low-carb yoghurt mixed with 1/2 cup of Greek yoghurt

Snack: 1 pack of low-carb crisps.

Total carbs for today around 58

A little high today. Yesterday's carbs came to around 48 so that was a better day.

Still feeling the effects of giving up cheese. So far I've given up cheese, fries and Burger King & Mcdonalds. Yes, I've wiped them out of my life. I do have the odd portion of fries from time to time, but apart from that I have been very good.

Homemade burgers are the best. I'm so chuffed I can make tasty burgers

No going back to shop bought

I just made some low-carb bread

Check out the photo of my low-carb loaf at www.karenscckitchen.com on my Daily Log page. I cant import any images on here today :o(

Not bad for a first timer though

I've worked it out and the whole loaf comes to around 7 carbs per slice. I used 3 cups of soy flour and 1 cup of whole wheat flour.

I used a bread maker to make the dough and then kneaded it a second time by hand and placed it into a bread pan to rise for about 30 minutes and baked it in the oven at 350 for about half an hour.

So chuffed !

Going to have some toast today  ....If my tooth stops throbbing

My very first "Cheese-less" Week

Join my site for free and enjoy my sometimes completely fruitless and other times quite successful attempts at doing it Low-Carb

B'fasts: none all week....

Lunches: Most days have been chicken salads and today was a Buffalo Wild Wings grilled chicken salad

Dinners: Most evenings have been some kind of chicken with either vegetables or salad

Carbs for today comes to around 40

That's good because it means I can have a couple of pieces of high cocoa chocolate, should the mood take me and I wont be over my carbs for the day.

Having a really good week and as promised to myself for my New Years Resolution, I haven't had any cheese. It's kind of killing me because it's one of my favourites. You can grill it, sprinkle it or just slice it on crackers so having to do without is taking some getting used to.

Shame for the family cuz I've banned it from the house. I think there's about 4oz of cheese left in the fridge that the family can polish off, but none for me   and there won't be any cheese available in my fridge when that runs out

So onwards and upward for the New Year. Cheese-less but healthier for it me thinks

Any low-carb ideas? Let me know via my website www.karenscckitchen.com

Finally, What's your New Years Resolution?

www.karenscckitchen.com OK...Here goes.... Let's just start by saying Happy New Year and I hope all your dreams come true. I had a great time over Christmas visiting old places and celebrating with great friends. I miss my family and friends in UK and I know we will be catching up with each other soon.

Now, on with the carb story...

I think I should just get straight to the point with everyone and say that I have GAINED weight over the Christmas period.

Total gained...go to my Daily Log for Jan 1 2012  OMGGG!!!

Truth be told, It isn't really a shocker considering how much I've drank and eaten. Take tonight for example. Lamb spinach curry with 1 chapati and...... White Rice

I know I know....white rice!...a no NOOOOOO !

So, lets start afresh and say that from tomorrow I will be back on the wagon and taking this carb challenge seriously. Yes, seriously and I do mean it.

From tomorrow I will be back to the Daily Logs and telling the world how much I have lost next week.

Staying focussed and knowing that next week WILL to be a good one

Did anyone else have the same problem? Let me know. I could do with a few comments from people in the same boat. Contact me in my member area at www.karenscckitchen.com It's free to join.
